Simple Home Cooking - Pot Rice 煲仔飯

Nothing can be simpler than this - pot rice, salty fish with minced pork.

This is a classic Cantonese pot rice. When rice is semi cooked, place the minced pork with salty fish on top. After rice is cooked, covered for 10 minutes before dishing up. Add a few drops of soy sauce as you wish.

Meixiang 梅香咸魚 is the most ideal type of salty fish for this dish. You can buy salty fish and lean pork from the market. However I am a full time business lady, I have no time to do preparaton, so I buy the ready-made seasoned pack from supermarket. As my dinner lacks fibre, I therefore bought a bottle of watermelon juice to maintain a balance of diet.

My Healthy Home-Made Soup

Broccoli and mushroom are believed to be anti-cancer foods. Tonight I have cooked a very healthy soup with these two ingredients. Apart from healthy, it is easy, simple, quick and extremely economic.

Cost: broccoli (HK$2.5), mushroom (HK5) - Total HK$7.5 (US$1) for 2-person portions.

Heat a saucepan. Add extra virgin olive oil. Add in mushroom and broccoli. Stir fried, add 1/4 cup of water, cover and let it simmer for two minutes. Add salt before dishing up. Soup will be extracted from the essense of the vegetables. Extremely original flavour and yummy.

Anna's comments: Eating after 9pm is cheap, as most Hong Kong restaurants offer late night discount. Our hot pot dinner tonight is about 20% off normal rate. Late night dinner has several advantages other than paying lower price, restaurants are usually less crowed and noisy and you'll receive more intensive customer services.

Baked Eel Rice

Today I have a Cantonese dish at Tanyoto. Looks nice but doesn't look like its name: Baked Eel with Rice. I would rather name it Deep Fried Eel with Fried Rice. Taste is not bad, but could be better. HK$78 + 10% service fee (US$10)
